Used to live in Marylebone early 1980's and Sea Shell was my local chippy, always been a slightly upmarket place, them days had chauffer drivers in the queue, fancy limo's parked outside and filling up Lisson Grove. I used to do a lot of smoking fish but never whole fish like a haddock as in the Arbroath Smokie. It's down to how much salt is used, on a mackerel or salmon which takes a lot of salting without affecting the flavour I used to put 30 days on without worrying but haddock can be oversalted so had to cut back on it and we worked to 10 to 14 days on smoked haddock fillets. I've actually never had an Arbroath Smokie but I'm sure it will be good for 2 weeks, 10 days for definite if that's its production date? Anyway, if I'm wrong you won't be able to hunt me down 😂 |  | |  |
