If you use the far superior cut, streaky bacon, you have no need for this weighing down palaver as streaky stays in contact with the pan unlike the awful, tasteless back bacon which curls up and cooks unevenly….not that I’ve given it a great deal of thought.

Being Irish on my Dad's side I love white pudding but you struggle (well I've found anyway) to get decent white pudding over here, certainly nothing like the stuff I used to get at my Nan's whenever over in Ireland. Recently I got the butchers shop in my village to order me some and it was okay but nothing like the Irish stuff.

Interesting idea. You could replace the Marmite with Vecon*, which is vegetable stock which you can use for cooking, as the basis of a drink or as a spread. I have recently pimped my lunchtime beans on toast by serving the beans on toast spread with a mixture of low fat cheese spread and Vecon.

Re. bacon sandwiches, Aldi's ancient grains sliced wholemeal bread is healthy and utterly delicious, so I'd recommend using it in place of white bread. Adding some tomatoes or even mushrooms make the sanie even more wonderful in my view. Good thing I am eating while I am writing this (sardines on toast). |  |
