Chocolate Rum Pots

INGREDIENTS
UNITS: US
8 ounces dark chocolate (70% or higher)
4 eggs, separated
1⁄3 cup superfine sugar
4 tablespoons dark rum
4 tablespoons heavy cream

DIRECTIONS
1. Melt the chocolate in the top of a double boiler or in the microwave for 2-3 minutes and let cool slightly.
2. Whisk the egg yolks with the sugar in a bowl until very pale and fluffy.
3. Drizzle the chocolate into the egg yolk and sugar mixture and fold together with the rum and cream.
4. Whisk the egg whites in a clean bowl until standing in soft peaks.
5. Fold the egg whites into the chocolate mixture with a metal spoon.
6. Divide into 6 individual ramekins and let chill for at least 2 hours before serving.

As Catholic kids it’s was Shrove Tuesday but more importantly often it as mum’s Apple Sponge Cake Wednesday.

It might actually be called Eve’s pudding or upside down pudding but it is as I say an apple base with a sponge on top. For me though it was always pour the custard on top and then stick it in the fridge for an hour and let the dinner go down and then eat it cold.

Never got the recipe off of mum yet but need to inherit it whilst we are blessed to have her so I can carry on the tradition

There's another pud memory from my school day's, most puddings in the school canteen were grim rice or semolina pudding's but on the odd occasion the cooks used to bring out big trays of baked sponge with a smattering of jam on top and sprinkled coconut, I used to be lucky now and then and get one of the corner squares with just the right amount of not to thick hot custard, absolutely blissfully gorgeous.
I can see It and smell It now.
Halcyon days.

Enough already.

As a kid growing up we had puddings or pies pretty much every day. Bread pudding, apple and blackberry pie, spotted dick, jam roly-poly, various sponges - treacle, jam, chocolate, lemon, but my favourite has to be bread and butter pudding, but not that rubbish that masquerades as it in the supermarkets.

Arctic roll is still out there and is still great.

A good lemon meringue is a wonderful thing but am partial to anything with chocolate.

If you're doing cheesecake, baked raspberry is pretty tough to beat.

It's always noisiest at the shallow end

I do a lot of baking and for me the best is a key lime pie. We don't actually get key limes here, but it's still called that. Super tasty. I always make one at Xmas.

Nigella does an amazing sticky toffee pudding that has dates in it. It'll change your life. Really decent.

I made a spiced pear and ginger cheesecake for xmas also and that was really good also.
